Chef Zach’s Korean BBQ Lo Mein with Meatballs

INGREDIENTS

  • 5 lb Bag .5 oz Maid-Rite Fully Cooked All Purpose Frozen Meatballs (Thawed)

  • (Code # 73119-10501)

  • 1 cup Julienned Carrots

  • 1 cup Sliced Bell Peppers (Mix of Colors)

  • 1/2 cup Sliced Red Onions

  • 1/4 lb Sliced Button Mushrooms

  • 1 cup Snow Peas

  • 2 cups Baby Bok Choy, chopped

  • 3 Tbsp Fresh Ginger, minced

  • 2 Tbsp Garlic, minced

  • 1 ½ Tbsp Toasted Sesame Oil

  • 1-2 Tbsp canola oil (or any other neutral-tasting oil)

  • 2 lbs Cooked Lo Mein Noodles

  • 1 cup Korean BBQ Sauce

  • Crispy Wonton Strips

  • Roasted Cashews​

  • Sliced Green Onions

DIRECTIONS

  1. Heat sesame oil in a frying pan & sauté thawed Maid-Rite Fully Cooked All Purpose Meatballs on medium heat for 5 minutes. Remove from the pan and set aside.

  2. In the same pan, add canola oil and stir-fry carrots, peppers, onion, mushrooms, and snow peas until tender crisp.

  3. Add baby bok choy, minced ginger, and minced garlic. Stir until tender.

  4. Add sauteed meatballs back into the pan along with cooked Lo Mein noodles. Pour in Korean BBQ sauce and toss to coat. Heat until meatballs reach an internal temperature of 165°F.

  5. Top with crispy wonton strips, roasted cashews, sliced green onions, and ENJOY!
