
Easy Ground Beef Tacos

(Serves 50)
FOR THE TACO SEASONING:
6 1/2 tablespoons chili powder
2 1/4 tablespoons cumin
1 tablespoon salt
1 tablespoon oregano
1/2 tablespoon smoked paprika
1/2 tablespoon cayenne
FOR THE GROUND BEEF:
6 oz. olive oil
3 white onions chopped
13 cloves garlic minced
6 1/2 lbs. ground beef
6 1/2 cups tomato sauce
6 jalapeno finely chopped
TO ASSEMBLE:
50 tortilla I used low-carb multi-grain tortillas
romaine lettuce shredded
monterey jack or cheddar cheese
diced tomatoes
DIRECTIONS
1. Prepare the taco seasoning mixing together all the ingredients and set aside.
2. In a large skillet over medium heat, add the olive oil. When the oil is hot, add the onion and sauté until soft, about 4-5 minutes. Add the garlic and continue to sauté until fragrant, about 2 minutes.
3. Add the ground beef and cook, breaking up the meat into smaller chunks, until it is cooked through, about 5 minutes.
