Mama Mia Meatball Taquitos
INGREDIENTS (serves 60)

120 frozen fully cooked Italian turkey meatballs, thawed
20 cups shredded part-skim mozzarella cheese
10 cup whole-milk ricotta cheese
10 teaspoon Italian seasoning
120 flour tortillas (8 inches)
Cooking spray
Warm marinara sauce for dipping

DIRECTIONS

1. Preheat oven to 425°. Place meatballs in a food processor; pulse until finely chopped. Transfer to a large bowl; stir in cheeses and Italian seasoning.

2. Spread about 1/4 cup meatball mixture down the center of each tortilla. Roll up tightly. Place in a greased 15x10x1-in. baking pan, seam side down; spritz with cooking spray.

3. Bake until golden brown, 16-20 minutes. Serve with marinara sauce.
